How do you make alioli less olive oilly?
I have made some aioli and it tastes too strongly of olive oil. How do I tart it up to taste less of olive oil, apart from adding a jar of helmans mayonaise to it?
Well, first of all, you could use a milder olive oil or a different oil altogether - one with a milder flavor - such as grapeseed or sunflower. You also might add lemon juice, if you didn't, as many aoili recipes call for that anyway and it helps balance the oil. Lastly, you might add other flavors in there to balance it out, like garlic, mustard, rosemary, or sun dried tomato.
