How to make hot pepper powders?
I am growing Cayenne, Jalapeno, and the one I'm most excited about Habanero this summer. As seedlings have come up for each type I started to think about what to do with the harvest. I would like to eat some fresh, make some hot sauce and also make some powder from the cayenne and habanero. I've seen dried habaneros that are almost black and other that are still orange, how can they be dried at home, whole, to preserve the beautiful orange color as much as possible? Also when making powder from whole dried peppers are the seeds removed before pulverizing, or can they be left in? Finally is powder made from just the peppers with no additional spices/seasoning? Any recipes for sauces and powders would be appreciated.I need all the info I can get. Thanks in advance!
Rushnbon, The Europeans, Spanish, Mexicans and alike, still do traditional sun drying of there bell tomatoes, peppers and such. Some go as far as oven dry.
When I buy the whole dried chili's or someone gives them to me, i have this electrical gadget that looks like a coffee grinder, I grind my spices in there, including the chili's, and the chili comes out a powdery orange, if there is some black from charring it doesn't matter.
