- 1 Teaspoon sugar
- The yolks of 2 eggs
- 2 Tablespoons lemon juice
- 2 Tablespoons vinegar
- 11/2 Cup extra virgin olive oil
- A pinch of cayenne pepper
Method:
- Mix the dry ingredients
- Place the egg yolks and dry ingredients in a bowl
- Add the lemon juice and vinegar
- Start blending the mixture with your hand blender and slowly pour in the oil, drop by drop, until the mayonnaise is the right consistency.
- You may not always need all the oil or you may sometimes need a little more oil.
- Spoon the mayonnaise into a clean bottle and refrigerate until you need it. You can of course use it immediately.
From this basic recipe you can make a variety of sauces by adding different herbs and spices. Give your imagination free reign!
